- Place the vegetables in a non-stick PAL roaster.
- Add the salmon on top in large pieces.
- Mix all the vinaigrette ingredients well and pour over the salmon and vegetables.
- Cover the roaster with the lid and bake at 200°C (400°F) for about 25 minutes.

1 broccoli (cut into small florets)
2 carrots (thinly sliced)
500g salmon
Salt & pepper
For the Vinaigrette
100g water
25g olive oil
50g white wine
2 tbsp mustard
Juice from 2 lemons
