You will need

1 broccoli (cut into small florets)

2 carrots (thinly sliced)

500g salmon

Salt & pepper

For the Vinaigrette

100g water

25g olive oil

50g white wine

2 tbsp mustard

Juice from 2 lemons

  1. Place the vegetables in a non-stick PAL roaster.
  2. Add the salmon on top in large pieces.
  3. Mix all the vinaigrette ingredients well and pour over the salmon and vegetables.
  4. Cover the roaster with the lid and bake at 200°C (400°F) for about 25 minutes.
